picadillo sweet potato
it's giving everything u crave in a sweet potato dish
picadillo sweet potato
serves 4-8
INGREDIENTS:
olive oil or ghee
4 sweet potatoes [i used japanese sweet potatoes]
1-2 onion, chopped
1 bell pepper, chopped [i used red]
1-2# ground meat [i used beef]
3 tsp chili powder or powdered aleppo pepper
1-2 tsp salt [i use 1tsp salt for 1# meat]
1 tsp cumin
1/2 tsp cinnamon
15oz can crushed tomato
1/2 cup green olives, sliced
1 1/2 avocado
1/2 cup sour cream or full fat greek yogurt
1 lemon, juiced
1/2 tsp garlic powder
pinch of salt
DIRECTIONS:
preheat oven to 400F. wash, dry, oil up, salt, and poke [i did it 4x] sweet potatoes. roll them up in parchment paper and tuck the ends of the parchment underneath the potato. place on a sheet tray and roast until u can pierce with a paring knife. this will take around 45 mins.
while the sweet potatoes are roasting, go ahead and make ur picadillo. in a taller sided skillet or a small dutch oven [i used my 4qt staub], drizzle in olive oil or ghee. sauté onions and peppers with a pinch of salt until softened - about 5 mins or so. next, add in ur ground meat**, chili powder, salt, cumin, + cinnamon. break it up with a straight sided spatula [i prefer this style] and cook until browned.
next, add in the crushed tomatoes and let simmer for about 10-15 mins. then, add in ur green olives and mix until combined. remove from heat and voila! ur picadillo is complete!
for a lil fun addition, i like to make an avocado crema. u can do this in either a blender or food processor. add avocado, sour cream/greek yogurt, lemon juice, garlic powder, and salt [tt - to taste]. blend until smooth and season to taste.
build ur masterpiece - start with ur baked sweet potato, slice it open, smear with butter or ghee [optional], top with picadillo, drizzle with avocado crema, top with pickled jalapeños, and sprinkle with tajin :) now enjoy!
